The Metodo Classico Rosé 1984, born from the idea of showing to the public what a Lambrusco from Modena is able to achieve, that is, also with Lambrusco Grapes (young wine with great fruit) an Excellent Classic Method of 24 months can be obtained. It is a Classic Method with a precise design taste: composed of a selection of Lambrusco Grasparossa di Castelvetro grapes of D.O.P. for his deep scent of red fruits, and Lambrusco D.O.P. of Sorbara for its high acidity that lends longevity to this wine. 1984 Rosè is obtained from a first natural fermentation in a steel barrel and from a second natural fermentation in a bottle. Very slow fermentation at low temperatures to preserve all the aromatic richness that the wine yields during this phase. After a long rest in a bottle for 24 months on its yeasts, the wine is ready for the operation of disgorging (dégorgement à la volée), an operation requiring extreme accuracy as well as experience, that allows the remove, due to extra pressure, the fermentation deposit under the cork – the bottle is then immediately corked. After this long wait we get a copper-colored spumante wine, with a fine perlage, lively and persistent. An intense scent, aromatic and complex, with grapefruit notes recalling black currant, strawberry, and raspberry. A modulated and rich taste with red citrus sensations, structured and savory, with a pressing pace, pleasantly persistent in the end. Ideal as an aperitif, but at the same time with its extraordinary balance, good body and length is able to support the whole meal pleasantly, especially the charcuterie of Modenese tradition.
